
The world’s oldest restaurant was founded in Madrid in 1725. Restaurante Sobrino de Botin still uses the original wood-fired oven, and their roast suckling pig is so good that Ernest Hemingway honored it in the Sun Also Rises, where he wrote: ‘We lunched upstairs at Botin’s. It’s one of the best restaurants in the world. We had roast young suckling pig and drank rioja alta.’
