Lactose intolerance is one of those conditions where, if you have it, you have to just… pretend to forget, sometimes. Because cheese and ice cream and yogurt are TOO GOOD to ignore forever.

Fortunately for the lactose-averse, not all dairy products contain the same amount of lactose. Whole milk is obviously at the top of the scale; it’s full of lactose and will bring nothing but misery into your life.
Certain dairy products, however, contain way less lactose. They may not bother lactose-intolerant people at all, depending on your level of sensitivity.
That brings us to CHEESE.
One form of cheese that contains practically no lactose at all: parmesan cheese!
Parmesan is considered a “low-lactose” dairy food; some even call it a “lactose-free” food. It contains less than 1 gram of lactose per serving. By comparison, a cup of whole milk has 12-13 grams of lactose per serving.
It’s not just parmesan, either. Other aged cheeses, such as Swiss and cheddar, also fall into this category.
Fresher cheeses, though, like ricotta or feta cheese, have more lactose and may cause discomfort.
Basically, the harder and more aged the cheese, the more likely that you can safely eat a plateful without spending the rest of the night in the bathroom.
Aging makes cheese yummy, and it also causes the lactose to break down.
